Turkey, chicken and lemon meatballs with Orzo

A very Greek inspired dish, which is made on repeat in our home.. a very quick and easy meal which can be served as a main or as a meze dish! Yamas! 

Ingredients - serves 6 as a main. 

400g Turkey and chicken mince ( one or the other works too) but 800g.

1 egg

1 red onion

1/4 block of feta

2 lemons - rind and juice required. 

1/2 bulb garlic - less or more depending on taste

Fresh parsley

500mls chicken stock. 

Oregano, salt and pepper to taste

 

Start with a large bowl, and mix in the mince, grated onion, egg, feta, chopped parsley, rind and juice of one lemon, garlic combine well.   

Then divide into an equal amount of balls - between 60-80grams each depending on the dish being prepared.  I would recommend larger for a main meal and smaller ones for a meze.  Bake for 10-15 mins until nearly cooked then prepare the orzo,  this needs to be cooked in chicken stock as per package guidance.   When the orzo becomes slightly al dente, add in the lemon juice, some rind and meatballs for the final few minutes.  Finish with parsely, and sprinkle feta or parmesan to serve.
